in the outhouse, what are decent stats to have by level 30?

hard to say, the majority is probably close to 100 while there are a (very) few players around or above 10k total.

So with 500-1k u should be able to compete easily. Thing is at low lvl, its not hard to score points, and most hardcore players want trophies on low score (to not lvl fast)

And remember if u wanna be nice, check if an opponent is online and avoid him if he is.

i'm level 30 with stats around 2.5k and I have been beaten quite a few times lately.  Dunno if that helps

As stated above it's hard to say. But if you are to compete with the best in that discipline, you will certainly have to make an effort. 

Cockfighting is almost a subculture in this game, some are very much into it and they are willing to spend a lot of time and/or CC's at it. 

Others, the majority by the looks of it, don't care about it and are better of just accepting the recurring periods of "shame", saving time and CC's for other activities. 

So imho, if the reason you're asking is that you are tired of being beaten and not that you want to win, my advise is don't bother to try to keep up. It just ain't worth it.
