You make your girls (just the hookers) into warriors by training them at the gun shop (middle right of map) using the icon in bottom right (blue university cap (mortar board) and belt of ammo).
Once you have trained them you can use them to attack and defend hostile parlours you make (or are made on your map), or to have the gang (if you belong to one) use them on the second map to battle for bonus locations.
